The Bikini Cocktail

Yields 10 people

To make the Citrus Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Directions

To prepare the Cordial: Combine the listed items inside a pot, heat until it reaches a light boil, mixing to dissolve. Next, take off the stove allowing it to reach room temperature fully. Transfer into an sterilised bottle, close it and refrigerate it in the fridge, where it will keep for about a month.

For the Premix: Mix all the liquids into a big jug, leave to sit for one hour, then filter it preferably using muslin, making it completely strained.

For serving: Add 85ml of your premix to a cocktail shaker filled with ice, and stir carefully for about 60 seconds to cool it down. Filter into a cold coupe glass or equivalent, decorate with the cranberries and complete it by giving it a quick spritz of mandarin oil above the glass.
